When looking at which of my recipes consistently attract the most readers, the most engagement on social media and the most drool worthy comments, I’ve noticed that they have something in common. Pastry. Specifically, puff pastry.
I’m not really that surprised. Whilst I love a traditional shortcrust pastry which I use to make my Quiche Lorraine, puff pastry will always be my number one. It is buttery tasting and I just love that flaky light texture.
Plus is is super versatile and equally at home being used in a hearty and traditional British pie as it is in a light and delicate French patisserie recipe.
Homemade Puff Pastry vs Store Bought Puff Pastry
Homemade is not that difficult. I learnt to make it on a course. There is nothing arduous about the process, but it does require a bit of time and pre-planning.
Like anything that you make from scratch, you can control the ingredients and use the very best with no additives. I’ve even made homemade puff pastry with Homemade Butter before now. I didn’t grind my own wheat however!
I would highly recommend trying to make your own. If nothing else, it’s fun to try and say that you have!
Puff Pastry
But whilst I love to make my own, I do often buy it. Mostly ready rolled but sometimes in blocks. Mostly I buy fresh but I do generally keep some in the freezer too.
There is no shame, no “cheating” and no stress in using store bought puff pastry. As long as it tastes great, who cares!

Varieties of Puff Pastry
In addition to what I would just call “standard” or “regular” pastry, there are now several more options available.
All Butter Puff Pastry
“All butter” simply means that the pastry is made with 100% butter and not any kind of margarine. My homemade pastry is “all butter”. This tends to be sold as a premium product and it is generally worth the extra cost to get the full hit of buttery flavour.
Light Puff Pastry
Light pastry is generally made with a lower calorie alternative to butter, Usually some kind of margarine. I do buy light pastry quite often and there isn’t an awful lot of difference in taste between standard and light, I do however find that it tends to be much softer to work with so it is even more important to keep it chilled.

Gluten Free Puff Pastry
A good gluten free version can generally be found in the freezer sections of major supermarkets in the free-from section. I haven’t yet seen it sold fresh or ready rolled but I’m sure it’s coming.
Vegan Puff Pastry
You might be surprised to learn that the vast majority of “regular” shop bought pastry is vegan suitable. Do make sure to check the ingredients as different brands will vary.

Oh but not to have ground your own flour Chloe? Definitely worth doing. I’ve only done it once and it made the best bread ever. Freshly ground flour is a completely new taste experience. I think it’s fairly easy to get home flour mills these days. I’d go for it, if only we had the space.
Anyway, I digress a little. I do love puff pastry and now I want to eat a considerable number of the recipes you’ve highlighted. Rushes off to the freezer to see if there’s any puff pastry about.
