These Quick and Easy Pickled Red Onions are a super speedy way of perking up all manner of dishes. They’re ready to go in 5 minutes and ideal with Indian, Mexican and Middle Eastern dishes. Plus they’re perfect as a tangy garnish for soup, salads and sandwiches.

I am obsessed with these easy onions. I put them on nearly everything I eat. From Mexican green rice bowls to couscous, Indian curries to oven fried chicken burgers and white bean chilli to simple side salads and pizzas.
I make them in super small batches as I like them fresh when they’re tangy but still crunchy. But you can keep them in a jar in the fridge for a few days if you prefer.
The lemon juice, sugar and salt combo takes out the eye watering harshness that raw onion otherwise has. Which makes them a great ingredient or garnish that doesn’t ruin the rest of the day!

Easy Pickled Red Onions (In 5 Minutes!)
- 100 g Red Onion
- 1 tbsp Sea Salt Flakes
- 1 tbsp Sugar
- 2 tbsp Lemon Juice
- Finely slice 100g Red Onion into half moons or lengthways.
- Add 1 tbsp Sea Salt Flakes, 1 tbsp Sugar and 2 tbsp Lemon Juice to the red onions in a small bowl.
- Mix thoroughly and set aside for a couple of minutes.
