I am obsessed with these easy onions. I put them on nearly everything I eat. From Mexican green rice bowls to couscous, Indian curries to oven fried chicken burgers and white bean chilli to simple side salads and pizzas.
I make them in super small batches as I like them fresh when they’re tangy but still crunchy. But you can keep them in a jar in the fridge for a few days if you prefer.
The lemon juice, sugar and salt combo takes out the eye watering harshness that raw onion otherwise has. Which makes them a great ingredient or garnish that doesn’t ruin the rest of the day!

You have brought back happy memories, as my mum used to make these every Sunday, to go with Sunday tea. These, and pickled cucumbers too, such lovely carefree days…….Karen
