I’ve loved finally sharing these recipes for the sponge puddings that I’ve been whipping up on a whim my whole life. They’re simple, versatile and can be easily adapted to to use what you have in your pantry. But most of all they’re comforting and delicious.
I’ve gathered all of these cheat’s sponge puddings here. They’re all made in a 1 litre bowl and with the exception of the Christmas pudding which that is much denser, they all serve 4 generously or 6 after a large meal like a roast dinner.
Again with the exception of the Christmas pud, they are utilise the all in one mixing method. This means all you need to do is weigh your ingredients into a bowl and give them a mix (ideally with an electric mixer). Add them to your cooking bowl on top of any topping like lemon curd, golden syrup or jam and into the microwave they go. It couldn’t be any simpler.
