Roasted strawberries are a revelation. Easy to make in the air fryer or oven, they are intense in flavour and look fantastic. Use these sweet and glossy strawberries in a breakfast bowl, folded into a dessert or simply top with whipped creams for a delicious snack.

Just like with the official Platinum Jubilee Trifle in 2022, along with two savoury recipes, the monarchy have released a recipe for a Coronation Trifle from Adam Handling, a Michelin starred chef. I’ve never tried his food and although I’m sure it is wonderful, I can see that his recipe writing skills leave a lot to be desired!
After the runaway success of my simplified version of the Platinum Jubilee Trifle, it was a no brainer that I should set to creating a simplified version of the coronation trifle.
The original trifle recipe released on the official coronation website called for a layer of “roasted strawberries” but with zero instructions or quantities given. So I starting testing how to make delicious roasted strawberries as quickly and easily as possible to include in my Cheat’s version.
Cheat’s Coronation Trifle – Strawberry & Ginger
The flavours of the strawberries are really intensified by the roasting. The small sprinkle of sugar draws out the juices and simmers away to create a glossy sauce. This coats the strawberries and the fruit itself softens but keeps its shape.
So even if you are using most of my suggestions for ways to cheat with the trifle, its worth spending a couple more minutes taking this extra step. Or even just adding them to any other trifle. Because lets face it, Christmas isn’t Christmas without a sherry trifle!
Ingredients for Easy Roasted Strawberries
Strawberries
I’ve tested this recipe with both fresh and frozen strawberries. Frozen strawberries are a great economical option – they’re sold in all the major supermarkets including Aldi and Lidl. You will need to defrost them before roasting but this doesn’t take too long.
If you can, fresh strawberries are the best but the British strawberry season starts in early May (weather depending) and the Coronation takes place on 6th May 2023. So its debateable whether there will be a plentiful supply of British strawberries available when we want them.
Of course we import strawberries year round and the shops will (hopefully) be awash with them from somewhere in the run up to the Coronation so you (hipefully) won’t struggle to get some, they just might not be locally grown.
The good news is that roasting strawberries is a good way to bring out the flavour of not-quite-so-ripe ones.
Sugar
I add a small amount of sugar to the strawberries as they roast. This helps to bring out the flavour and also makes a slight viscous sauce with the juices that coats the roasted strawberries. You can sub honey or maple syrup if you prefer but otherwise I would recommend sticking with a regular white sugar – cheaper granulated sugar is fine.

These roasted strawberries are suitable for vegans and vegetarians as written.

Equipment Notes for Oven or Air Fryer Roasted Strawberries
You will of course need an oven or air fryer. Almost any air fryer will work for this recipe with the exception of rotary air fryers with a paddle. I use a Corsori Lite (CAF-LI401S) with a 3.8 litre capacity. The square(ish) shaped basket is 21cm x 21cm and 24cm on the diagonal.
What you will need is some kind of oven proof dish which will fit in the air fryer. I more often than not use my Pyrex dishes which also have a lid for easy storage.
I haven’t found one yet that that is the perfect fit for my square air fryer basket so I often make my own dish out of foil like I have here. The trick is to make sure that it is sitting on the rack and not the bottom of the air fryer and that there is room for the air to circulate down and around the sides. You also need to make sure its thick enough so you may need to double or triple layer your foil.
If you have a mini oven type, a larger air fryer or are simply using a regular oven, you should be able to use any of your normal oven dishes be they pyrex, ceramic, metal or enamel.

Get Ahead
You can make these roasted strawberries up to 4 days ahead. Make sure to store them in an air tight container in the fridge.
Easy Roasted Strawberry Tips
- Please be careful when tending to the strawberries during or after baking. If you aren’t gentle, you will end up with a chunky strawberry sauce!
- The cooking time will ultimately depend on the size you cut your strawberries. Bigger chunks will take longer to cook than smaller pieces. So please keep a close eye on them whilst roasting – my timings are a guide.
- For this same reason, try to make sure all your pieces of strawberry are cut roughly toan even size.
Other ways to use Roasted Strawberries
Of course there are a multitude of ways that you can use roasted strawberries that aren’t for a trifle layer.
A great way to use them is in place of or in combination with fresh strawberries in an Eton mess. Stir whipped cream, the strawberries and crushed meringues together for a super simple summer pud.
You can also use them to top cheesecakes, pavlova or simply serve on top of ice cream. I also like to add them as a layer to chocolate brownies – you get a much better flavour than using fresh strawberries.

Easy Roasted Strawberries Recipe
Equipment
- Air Fryer optional!
Ingredients
- 500 g Strawberries - fresh or frozen
- 2 tbsp Sugar
Instructions
- Trim the tops off 500g Fresh Strawberries. Cut any very large ones into 3 slices, medium ones in half and leave any small ones whole.ORAllow 500g Frozen Strawberries to thaw to the point that you're able to cut them in the same way as fresh.
To Oven Cook
- Preheat the oven to 180c fan | 190c | 375f.
- Place the strawberries in an ovenproof dish – try to allow them room to sit in a simple layer. If air frying, make sure that the dish fits in the air fryer with space left for the air to circulate.
- Scatter over 2 tbsp Sugar and gently toss.
- Bake in the oven for 25 minutes. Give the strawberries a gentle stir/turn after 10 minutes and then after 20 minutes. Reduce the cooking time by 5 minutes if cooking from semi frozen.
- If using for trifle, allow to cool fully before adding to the other layers.
To Air Fry
- Start the preheat setting on your air fryer if you have one.
- Place the strawberries in a suitable dish. Make sure that the dish fits in the air fryer with space left for the air to circulate. If you don't have a dish (or silicone liner) which is large enough, you can make a makeshift dish using foil. Make sure it is thick enough and double up layers if needed.
- Scatter over 2 tbsp Sugar and gently toss.
- Air fry at 160c | 320f for 13 minutes. Give the strawberries a a gentle stir/turn after 5 minutes and then after 10 minutes. Reduce the cooking time by 3 minutes if cooking from semi frozen.
- If using for trifle, allow to cool fully before adding to the other layers.
