Chicken Caesar Salad with an ooey poached egg on top is most certainly a feast! I use my caesar salad recipe and homemade dressing as a base for a hearty salad packed with flavour. Roast the chicken and make the dressing in advance and the whole thing will only take 15 minutes to put together. A perfect everyday feast.

Everyday Poached Egg & Chicken Caesar Salad Americana Feast Recipes
The beauty of this menu is that you can ‘cheat’ at almost every stage. By using a ready cooked chicken, bought croutons and ready prepared salad dressing, you can have the whole thing ready to go in a jiffy.
Or roast your own chicken and make the salad from scratch for a truly scrumptious meal-sized salad.
How to Make Roast Chicken
Simply roasted chicken can be served hot or cold, shredded or chopped in the salad. I like to reheat my chicken in some of the reserved juices for maximum moistness.
A whole chicken will provide enough to feed 6 or 8 as part of a decent sized salad. Leftovers can be kept in the fridge or used in a curry, Chicken, Ham & Mushroom Pie or Chicken, Peanut & Lentil Soup.
Classic Caesar Salad
My salad recipe makes one side portion of salad. Use the portion size adjuster in the recipe card to double the number of people you’re serving. For example, to feed 4, adjust the recipe to 8 portions.
How to Make Caesar Dressing
The dressing recipe given is enough to make 4 meal sized salads. It is difficult to make in smaller quantities so store any leftovers in the fridge, it keeps very well. Use leftovers for more salads, as a spread for a chicken salad sandwich or even in a pasta salad.
How to Poach Eggs
I like to serve one egg per salad but sometimes if I’m feeling greedy, I’ll go for two! Keep the yolk nice and runny and it will meld into the dressing and enrich the salad.
As an alternative, you could use boiled eggs if you prefer to have something which can be prepared further in advance.
