I’ll happily eat eggs for any and all meals but rarely do I have a breakfast without them. So I’ve rounded up 24 of the Best Breakfast Egg Recipes to give us all a little breakfast recipe inspiration.

You might have noticed from my entire set of Brunch Feast menu collections that I’m a little obsessed with the first meal of the day. And more often that not, that breakfast or brunch includes eggs. Honestly I love them. I can’t get enough of them.
So I wanted to share some of the recipes from both Feast Glorious Feast and other top food blogger so we all have a little more inspiration. There is absolutely nothing wrong with some simple poached eggs on toast but sometimes its nice to be a little extra!
I’ve included some simple classics too, as well as some options with bacon/ham/sausage, some spicy numbers for a little kick, a few veggie options and even some egg based pancakes and waffles. Plus I couldn’t resist including some fruit curd recipes. Because curd on toast for breakfast is an absolute delight!

Keep it Simple – Easy & Simply Breakfast Eggs
Breakfast doesn’t always have to be super fancy. These simple ideas all keep eggs as the absolute star of the show. But I think that making 3 fried eggs out of one is my favourite recipe. Say what now?!

Make it Meaty – Bacon & Breakfast Eggs (ish)
Cured pork products make the most amazing bed fellow for eggs. The savoury saltiness of meat, pairs perfectly with a soft, rich and yielding egg. Here are a few different options including prosciutto, chorizo, ham and bacon. If you’ll excuse me, I just need to pop off and make a sandwich…

I appreciate that bacon isn’t everyone’s cup of tea. Whether you choose not to eat it, don’t like it or simply don’t have any in the fridge, there are still plenty of eggy breakfasts for you. Plus all of these recipes are going to help you along with your 5-a-day target too.

Pancakes & Waffles (Made with Eggs!)
Whilst a tiny bit tenuous in an egg roundup, I couldn’t not include a few of my favourite pancake and waffle recipes. All of them rely on egg for their texture, especially my savoury offering of Sweet Potato Pancakes where the egg white is whipped to create the rise and fluffy texture. You can even pop and egg on top if you like!
How to Make Pancakes
Sweet Potato Pancakes with Sweetcorn & Chilli
Scotch Pancakes (Drop Scones)
Spelt Waffles with Rose Raspberry Sauce – Tin & Thyme
Eggs on Toast? – Fruit Curds
All fruit curds use eggs. So spread some curd on toast and you have eggs on toast right? Anyway I love a good curd, much more so than jam or marmalade so I had to include some of my favourites.

Microwave Lemon Curd – Charlotte’s Lively Kitchen
Easy Blackberry Curd – Fab Food 4 All
A Note about Vegan Eggs
I do try to include options for all diets in Feasts, recipe posts and roundups. But vegan egg recipes are a bit beyond my ken. For cooking, baking and scrambles, there are great liquid egg substitutes now available in supermarkets. Scrambled tofu is another alternative but unfortunately, science hasn’t quite come up with a solution for vegan poached eggs. Sorry.
